Looking forward we have made one big decision, to switch our oil fired arch in favor of a wood/pellet evaporator. We will not only be using a natural renewable resource, but with a little extra work save a ton of money. Today's wood fired evaporators are so efficient that making the switch is not as bad as it may seem for a larger producer such as ourselves. I will miss the speed and efficiency of our current arch, which frankly I love, but I think it will be better in the long run. We estimate we will use only 16 cords of wood for 8000 gallons of syrup, so that is really not too bad. Top that off with firing every 45 minutes and having pellets as a backup and I don't think we can go wrong.
